Add the fruit and water to a blender or a food processor and puree until smooth.
Combine the fruit puree and honey in a small saucepan over low heat. Stir occasionally, until the mixture is warm but not boiling.
Sprinkle the gelatin powder over the warm fruit mixture while whisking continuously to prevent lumps from forming. Whisk until the gelatin completely dissolves and the mixture is smooth.
Remove the saucepan from the heat and allow the mixture to cool for a few minutes.
Pour the mixture into silicone molds. You can also use a shallow dish lined with parchment paper if you do not have silicone molds.
Place the molds (or dish) into the refrigerator and let the gummies set for at least two hours or until firm.
Once the gummies are set, remove them from the molds. (If using a dish, cut them into your desired shapes.)
Store the gummies in an airtight container in the refrigerator for up to one week.
